Yogurt, Oats, and Walnuts

As you guys know, breakfast is one of my favorite meals of the day.  I LOVE taking care of myself early in the morning so I can put my best foot forward throughout the day.  I almost always try to eat protein during this meal, as studies have shown health benefits of doing so, including helping you feel fuller longer and thus avoiding those snacking munchies you get before lunch.  Yet, I often get tired of eggs and am always on the lookout for protein packed options.  I came up with the below option when I was craving a warm breakfast and the cold Greek yogurt in my fridge wasn’t going to cut it.  It was yummy, healthy, and hit the spot. I hope you enjoy:

Ingredients:

  • 1/3 cup of cooked oatmeal (very warm)
  • 1/3 cup of Greek yogurt
  • 4-5 walnuts, chopped
  • ¼ of a banana, chopped (or less if you want minimum sugar)
  • 1-2 dried prunes, chopped (or less if you want minimum sugar)

Preparation:

Take your very warm cooked oatmeal and combine with the yogurt.  Top with the chopped walnuts, bananas, and prunes.  Enjoy!
