Grilled Corn with Lime Salt

This simple yet delicious recipe is a variation of one found in Ad Hoc at Home by Thomas Keller. I love making this in the summer alongside a grilled dish.

Ingredients

  • 4-6 White or yellow corn, shucked
  • 4-6 Tablespoons of unsalted butter
  • ¼ Cup sea salt or kosher salt
  • Zest of one lime

Preparation

Bring a large pot of water to boil. Heat a grill (charcoal or gas is fine). Take the lime zest and combine with the salt.  Set aside.

Once water is boiling, parboil the corn for 3 minutes or so, until slightly tender. Take the parboiled corn and finish cooking until tender on the grill. When done, take the butter and spread on corn. Finish my sprinkling the lime salt on corn.

Selection and Storage:

  • Choose corn stored out of direct sunlight as it is highly susceptible to microbial contamination upon exposure to heat
  • Look for corn whose husks are fresh and green, not dried out, that envelope the ear, and that do not fit too loosely around it
  • When examining kernels, they should be plump and tightly arranged in rows
  • Store corn in an air-tight container or tightly wrapped plastic bag in the refrigerator
  • Do not remove corn from its husks until you are ready to eat them as the husks protect its flavor
