Apple and Peach Quinoa

I love this recipe!  I love it with roasted chicken or with grilled skirt steak.  YUM!  It is my adaptation of a quinoa recipe in Alejandro Junger’s Clean Eats, but with a bit more flavor.  This is fast, healthy, and delicious, which you know are three of my favorite things in the world!

Here’s a delicious recipe!

Apple and Peach Quinoa

Ingredients

  • 1 cup dry quinoa
  • 2 firm white peaches (or nectarines, I love nectarines in this recipe)
  • 2 apples
  • 4 tablespoons of apple cider
  • 1 teaspoon salt
  • 2 celery sticks
  • 2-3 green onions

Preparation

Cook the quinoa according to the instructions on the package.  Cut the peaches, apples, and celery sticks into small, bite size pieces.  Chop the green onions. Combine the quinoa, peaches, apples, apple cider, salt, celery, and green onions in a bowl.  Enjoy!
