Apple and Peach Quinoa
/I love this recipe! I love it with roasted chicken or with grilled skirt steak. YUM! It is my adaptation of a quinoa recipe in Alejandro Junger’s Clean Eats, but with a bit more flavor. This is fast, healthy, and delicious, which you know are three of my favorite things in the world!
About Peaches
- One of the most delicious and popular fruits of summer
- Native to China, from where they spread to the rest of the world via the ancient silk route
- Depending upon variety, flesh is white to creamy-yellow

Selection and Storage:
- A ripe peach will feel firm, just beginning to yield to gentle pressure
- The aroma of a peach is the best indicator of ripeness
- Ripe peaches can be refrigerated for a few days

Apple and Peach Quinoa
Ingredients
- 1 cup dry quinoa
- 2 firm white peaches (or nectarines, I love nectarines in this recipe)
- 2 apples
- 4 tablespoons of apple cider
- 1 teaspoon salt
- 2 celery sticks
- 2-3 green onions
Preparation
Cook the quinoa according to the instructions on the package. Cut the peaches, apples, and celery sticks into small, bite size pieces. Chop the green onions. Combine the quinoa, peaches, apples, apple cider, salt, celery, and green onions in a bowl. Enjoy!
